Torque Capacity:

For the majority of people going with organic discs 1 and 2 with the standard pressure plate is strong enough to handle their build.

For torsion damper, it is best to go with the damper instead of rigid. This will reduce clutch chatter and make the clutch smoother and easier to operate when daily driving.

The Performance pressure plate is going to increase clutch engagement effort, making a firmer clutch pedal. It is not needed for most applications.
